Kimchi (김치)

Traditional Korean Kimchi

Ingredients

  • 1 Napa cabbage
  • 1/4 cup sea salt
  • 1/4 cup Korean red pepper flakes (gochugaru)
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon sugar
  • 4 green onions, chopped
  • 1/4 cup fish sauce

Instructions

  1. Cut the cabbage into 2-inch pieces and salt. Let it sit for 2 hours.
  2. Rinse and drain the cabbage thoroughly.
  3. Mix the red pepper flakes, garlic, ginger, sugar, and fish sauce to make the paste.
  4. Combine the paste with the cabbage and green onions.
  5. Pack into a clean jar and let ferment at room temperature for 1-5 days.

Bibimbap (비빔밥)

Ingredients

  • 2 cups cooked white rice
  • 200g beef mince
  • 2 cups mixed vegetables (carrots, spinach, bean sprouts)
  • 2 eggs
  • 3 tablespoons gochujang (Korean red chili paste)
  • 2 tablespoons sesame oil
  • Soy sauce to taste
  • Garlic and ginger, minced

Instructions

  1. Cook rice and set aside.
  2. Season and cook the beef mince until browned.
  3. Separately sauté each vegetable with garlic and season with salt.
  4. Fry eggs sunny-side up.
  5. Arrange rice in bowls, top with vegetables and beef in sections.
  6. Place the fried egg on top and serve with gochujang.

Bulgogi (불고기)

Prep Time: 30 minutes Marination: 4 hours Cook Time: 15 minutes Servings: 4 people

Ingredients

  • 500g thinly sliced beef (sirloin or tenderloin)
  • 1/2 pear, grated
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 teaspoon black pepper

Instructions

  1. Mix all marinade ingredients in a bowl.
  2. Add the sliced beef and marinate for 4 hours or overnight.
  3. Heat a large pan or grill over medium-high heat.
  4. Cook the marinated beef in batches until browned and cooked through.
  5. Serve hot with rice and lettuce leaves for wrapping.
